Quesadilla

There is a new type of vegan cheese available in our area. It is called daiya and comes shredded. This is great for pizza or quesadillas.
We needed a quick meal for unexpected guests so we put together a very easy meal from what we had.




Ingredients:
Chop one green pepper.
Chop one small red onion.
Peel and mash two avocados with 1 Tbsp lime juice.
1 can refried beans.
6 tortillas
1 cup salsa

To Make:
heat the beans in a pot
add the beans to 6 tortillas and place in fry pan (we like heavy cast iron)
sprinkle Daiya vegan cheese on top or inside tortilla
heat until cheese melted.
Serve with salsa, avocado, onion and green pepper.

Pizza with Kale


For some strange reason there are people who are less than excited to eat Kale (the best green leafy vegetable ever made).
We have been adding it to pizza and have yet to have anyone dislike it.



For this pizza we used our home made bread dough.

We topped it with:
Salsa
Red Pepper, chopped
Dehydrated kale
Earth Balance Italian style vegan cheese, grated


After baking for 30 minutes at 350 degrees F in the bottom half of the oven it is ready to cut and serve.

Eggplant Chips

Ingredients:
2 eggplants sliced equal thickness (we do 1/4 inch)
Olive oil to coat each slice is Optional

To Make:
Place in the dehydrator and dehydrate until crunchy

This makes a pretty tasteless chip but is great as a low calorie snack dipped in salsa. The entire snack is veggies if you make it without oil.




This is how dry they look when they are done.




Made with oil they taste much better by themselves but don't have the low calorie, low fat advantage.






This is a bowl of eggplant chips and dehydrated kale ready to be snacked on or added to recipes.

Cinnamon Rice

We have lots of brown rice in the refrigerator so we came up with this recipe.


Ingredients:
1 cup brown rice
3 cups cold water
2 apples, cored and diced (we don't peel them but you could)
1 Tbsp brown sugar
1 tsp cinnamon


To Make:
Add all ingredients to a heavy pot.
Bring to a boil then turn down and simmer until the rice is soft. This batch took 55 minutes.
Serve alone or with 1/2 cup of vanilla soy milk.


Options:
You could serve it with almond or rice milk.
You could top it with chopped nuts such as almonds, walnuts or pecans.

More Spicy Potatoes

 Ingredients:
1 sweet pepper, any colour, chopped into bite sized pieces
6 medium boiled potatoes, chopped into bite sized pieces
1 pound firm tofu (we like herbed but you can use plain)
3 large carrots, boiled and cut into bite sized pieces
2T canola oil
1T Tex Mex Seasoning

To Make:
Add chopped potatoes, peppers, tofu and carrots to a large bowl.
Add canola oil and toss to coat
Add more canola oil if it is not enough to coat
Add the Tex Mex Seasoning and lightly toss to mix in.
Place on a baking sheet
Bake at 350 degrees F for 30 minutes.

 Here is another version with one red pepper and no carrot. You really can't do much wrong with this recipe.
